Not that I can exactly fix it but I just want to see.
Sorry, I will start a complete new game, and I have no folder of Subnautica Data, because the game broke during the first 2 seconds after klick the start button, and so, there are no folders. Sorry.
You said you're on mac, but regardless of the os, here's how to get to that file:

Do a search for output_log.txt Find the one stored in a directory with Subnautica or Unknown Worlds somewhere in it, and post that.

July, 20. a little Update about this morning. Nothing better.
Game crashes in the first second. After click the start button, the SN-Icon plops up in my Dock for a half a second and than it closes immediately.

See if you can find a folder with a date on it in a UWE or Subnautica folder. Looks something like this (ignore the instructions, it's from another thread I made):
/Users/<username>/Library/Preferences
/Users/<username>/Library/Application Support
/Users/<username>/Library/Containers
/Users/<username>/Library/Group Containers

I have no "EarlyAccesWarning". What do you need? If you want, you can go over Taemviewer on my Mac and search for the problem. Tell me time, I will be here to give you access.
Once again, If I click on "Start Game", only 1 Sec. and the Game closes again. No warning, no message.
Now, I hope you will fix this soon.
Stable is there to play on Mac OK. Remember guys, experimental will break from time to time. This is to be expected when you're on the bleeding-edge branch.
