I would say do everything else possible to look nice, and go with the piercings in. Then if they don't bring them up, ask about it, if they have a negative additude towards the piercings tell them basicly what you told us. That you like them and would prefer to keep them, and some of them would likely not be possible to put back in after removing, but if they really had to go to get the job they could (if you think that way that is). In short, rather than trying to work around it, present them with all the info on why or why not you can have them.
If your not dealing with customers, piercings shouldn't be a problem. And if your in a coding position they will likely lock you in the back room with a faux brick wall covering the door, so I wouldn't worry too much about it.
You could always ask them about it, if you dressed nice I'm not sure it would be too big of a concern. The job your applying for is more about your skills than appearance. Try not to wear colors that bring attention to the piercings (black no, grey and white yes).
Aren't there some sort of lower profile piercings you could put in?
I've worked in the IT field for 9 years now. I have lots of tattoos, completely visible on my arms. Whenever I went to an interview, I asked the rep beforehand what the dress-code is that they recommend for the interview process - some want a suit, others don't (when I interviewed at Microsoft, they said that if you came in a suit, your odds of hiring went way *down* - I wore jeans and a t-shirt, and got hired).
Bottom line, most places I went I knew I was going to have short sleeves on at some point, and I did wear them right away. I never had any issues after being hired or contracted, and the tattoos were never an issue. I also often had to deal with customers or upper management types, and they expected that because I was an IT engineer and a former Marine, I was going to be a bit... different. They didn't care, because they knew I was highly skilled.
The key thing is what's going to make you comfortable in the interview. If you are feeling self-conscious with all the gear, take it out. Put it back in when you get hired. At that point, most companies are loathe to let someone go based on appearance anyway, as that opens the door to an HR nightmare and a civil suit.
And besides, any place that wants you to dress up for a backend coding job is no where you want to work. Trust me, they are not going to be going anywhere, as their priorities are way out of wack in this field.

Do you realy want to work at a place that would require you to take out your piercings? (for good probably)
I would sugest this:
1) decide just howmuch you want this job and what you are willing to sacrifice.
2) Go to the interview with your piercings.
3) Ask em what their dress code it and make it clear what you are/are not willing to do for the job.
I personaly am a scruffy bast'd and went to my interview (I work in retail now, so it is all customer interaction) simply wearing nice cloathes, and gave the beard a trim.
The guy giving my second interview (district manager) asked about the beard and the hair. I said I am willing to keep the beared trimed, but the hair stays at around that length. They said ok, and I have the job.
I get periodic coments from higher ups about me looking like Jesus, but they are realy more concerened about my performance (and my apearance obviously dosn't hurt my performance).
heck, my boss is a former marine and only lightly jokes about my looks with me.
All in all, decide what you are willing to give up and stick to your guns. Most of us know you realy like your piercings, and we don't blame you.
So don't promis sometihng you know you realy don't want to do, and be confident.
Well i'm very attached to them, but in all honesty, it wouldn't be the end of the world if i did have to remove them, it really wouldn't, but if it's gonna cost me a job just for them, i'd be more inclined to remove the labrets and nostril piercings for it.
I have spent quite a lot of money on them too, but that becomes entirely moot considering i could easily pay for them all again on one month's salary.
But thanks for the wise words people, especially MonsE, makes a lot of sense. But also raises another point. As i wasn't expecting the call about the interview and was currently ingame in NS, i forgot pretty much anything i wanted to ask, including dress code. So how should i turn up dressed?
I don't wanna turn up in a suit if they're all relaxed and laid back, but i don't want to turn up in jeans and a sweater if they're pretty formal about dress code. I know it's more than likely gonna be casual, but as i didn't ask, i don't want to take that chance, and also i can't exactly email the guy back and find out, it would make me seem very forgetful, not a thing you want to be seen as with prospective employers.
EDIT: I was thinking maybe go in a suit, but casually, no tie, top button undone, jacket undone and a pair of dark trainers (suit is black pinstripe).... what do you reckon?
When in doubt, dress up. I only dress down if I know for sure it's the way to go. You can always do the semi-formal too - the 'Men's Warehouse' look with a jacket but no tie. Which is what you described, and sounds very appropriate.

Esunub: have you thought about retainers? A friend of mine did that for work and they were okay with it (she's a graphics monkey at some real estate office or something). I'm not sure how they look, particularly with larger piercings, but you may be able to go to a piercer's and ask if they've got any suggestions.
Corperate America man... you gotta maintain a "perfect image" in the workplace.
It would be your best bet to remove them... I know you don't want to, I understand that, trust me, I don't agree with it either, but trust me, your chances will be hurt if your apparence isn't 100% professional at the time of the interview.

As for what to wear, get some Dockers, some casual leather shoes, a nice solid colored shirt and a applicable tie. For the love of god, don't wear a cap.
Shave your beard, and either tie your hair back or cut it.
For you're piercings:
Leave the tongue and you're 10 mils in. Find small simple studs for your nose if you don't want to take anything out for a time, that way you can have something there but nothing will be hanging out. For your lip.. (Christ man, what were you thinking?) either take them out (but doesn't drool seep through? I saw a guy a kinkos who had that problem, had to take them out and saliva was seeping through) or find smaller, less noticable ones.

I had problems at work over my tattoo's because you could see them through a white shirt but I work in Customer Services and the company is trying to project this clean cut professional image. You're working in a back room somewhere so as has already been said they shouldn't care what you look like. The one piece of advice I was going to give you has already been said and that was just grab some retainers. In my opinion you should be fine with the plugs, and in fact they'll probably go down better than two gaping holes in your ears, my flatmate works at morrisons and he has 15mils in his ears and they don't seem bothered, whilst my other flatmate worked in Brantano part time and they amder her take out her lip piercings. So all in all, it would seem to ride on your employer not being an asshat.
And for clothing just go for the smart casual everybody wears these days, gives over that "I'm relaxed but going somewhere in life" impression apparently.

Bottom line: Looks matter. They shouldn't but they do. If looks didn't matter I'd have my hair a different color than it is right now. I wouldn't be wearing a suit right now if looks didn't matter. I wouldn't be wearing awkward dress shoes if looks didn't matter. Looks matter. Appearance is often greater than qualifications in the real world, that's just the way things are. You can't change things unless you get on top, and if you try to get in being radical you won't, and things will just stay the same.

I failed a job interview because I was "too honest." Good to know companies don't like hiring honest people, wish I had known that before, since I really needed a job.
Bah, job searching has gotten me down. Nothing like being a liberal arts major to rain on your parade. Off to an interview, and classes.
Bottom line: Looks matter. They shouldn't but they do. If looks didn't matter I'd have my hair a different color than it is right now. I wouldn't be wearing a suit right now if looks didn't matter. I wouldn't be wearing awkward dress shoes if looks didn't matter. Looks matter. Appearance is often greater than qualifications in the real world, that's just the way things are. You can't change things unless you get on top, and if you try to get in being radical you won't, and things will just stay the same.
