There are devices you can attach to phones to do this, usually cost like $6 or so.

However you should be aware that its illegal to record a phone call w/o first getting the person's approval that you're going to record it, otherwise if they decided to press charges against you they could. Just an FYI.

P.S. You watch Crank Yankers too much. :P

Er, as far as I know, only one party involved in the conversation needs to be aware that a conversation is being recorded, for it to be introduced as evidence.
That law is mostly to stop people from running homebrew wiretaps.
When taking a court statement it tends to be the norm to let the person you're talking to on tape that it's being recorded, and for them to agree or acknowledge it so the recorder cannot be accused of wearing a concealed microphone and leading the conversation into a confession or otherwise incriminating statement.

Oh, and there are plenty of programs that could be used for that purpose (recording phone conversations)... but they're under Linux. I'm sure there are probably one or two for Windows, just never bothered looking around.

In a quick correction, both parties involved must be aware of the conversation being recorded, else it shall be deemed inadmissable. In any event, I would probably just find a telephone recording control and then just hook it up through the input jacks on your computer and use micrsofts or any other software to record the sound to a .wav file and modify as you see fit using either Sound Forge, or ACID if you happen to have either, there are quite a few different ones out there.
