This is just something I thought about, could a decent but not great processor have anything to do with game file reading issues? Mine is a Intel(R) Core(TM) i5-6400 CPU @ 2.70GHz (4CPUs), ~2.7GHz

Your CPU's fine. Moving Subnautica to an SSD if you have one is recommended (link in my sig shows how).
