I enjoy Subnautica for what it is, but a harder and scarier version of this kind of game would also be welcome.

I'm pretty sure Subnautica is not intended to be a game with difficulty or large replay value.

Go almost due North from your escape pod's first location. There is a thermal vent in the safe shallows, that is a trove of sandstone.
