I really don't know much myself, but here is a small list
[SP] = Singleplayer mod
[MP] = Multiplayer mod

Damn, beat me to it.
Don't forget Sweet Half-life, it's a very obscure mod that few people have played, but still awesomeness in it's most pure form. I can't post a link because it's obscurity is such that I can't even find it right now <!--emo&???--><img src='http://www.unknownworlds.com/forums/html//emoticons/confused.gif' border='0' style='vertical-align:middle' alt='confused.gif' /><!--endemo-->
While both are meant to be MP, you CAN play singleplayer if you want to - But it's more fun to play on your own in multiplayer maps with bots.
On the same note as SweetHL, try to find "peaces like us"(or wca_hl).

Excellent mod with lots of cool maps and models.
You are a box, so is everyone is else. The objective is to kill them. Use the level to your advantage.

The levels have so many boxes you'll want to cry. If you stand still you blend in nicely and you can wait for other players to come along (a moving box is kind of obvious <!--emo&:D--><img src='http://www.unknownworlds.com/forums/html//emoticons/biggrin.gif' border='0' style='vertical-align:middle' alt='biggrin.gif' /><!--endemo-->)

someone should make a screen saver with scientists talking to each other... they rule.
Gonna have to put a me too up on that one.
And add this one:

Oh, and <a href='http://www.hl-invasion.fr.st/index_eng.htm' target='_blank'>Invasion</a> is truly a damn good mod, it has its own music and a whole bunch of new stuff that I haven't seen in any other mod.
RocketCrowbar 2(MP)
Chemical Existance(SP)
Call of Cthulu is not a polished mod, but its quite intresting as it creates a story and feels like you playing through one.
Rocket Crowbar 2 is a wee bit unbalanced right now, it its the successor to Surprise(PS07) and the original Crowbar. Play it if you want unique speedy action.
Chemical Existance while old, can be compared on the level of Poke646 for polish. But it has a more retro/neopunk/underground style. The weapons are pretty polished too.
One of the finest mods ever made.
Seeing as noone else posted it, basically its like Half-life single player, except with all your friends ^_^
So not-cool on the HL engine. Would make a great game, only on another engine.
