Most recently, I've found myself really LOVING the AquaNox2 soundtrack. It is truly awesome. I think it has some of the <a href='http://www.reflex-studio.com/music/aquanox2/feary_canyon.mp3' target='_blank'>BEST</a>. <a href='http://www.reflex-studio.com/music/aquanox2/mystery.mp3' target='_blank'>TRACKS</a>. <a href='http://www.reflex-studio.com/music/aquanox2/ordenssoeldner.mp3' target='_blank'>EVER</a>. The dark, murky ambience really comes through in it's tracks. (And then it has it's <a href='http://www.reflex-studio.com/music/aquanox2/fight_guit2.mp3' target='_blank'>battle music</a>.)
Other games with some awesome music that I loved would be Homeworld, Total Annihilation, No One Lives Forever 2, Command & Conquer, Deus Ex, Medal of Honor : Allied Assault, Descent, Super Metroid, Metroid Prime, and a few others which escape me at this time. Skies of Arcadia had good music, but it was in general too light or 'happy' for my tastes. My favorite tracks in the game where the Dark Rift, and the Maw of Tartas seal theme, of which I am highly reminded of in <a href='http://www.reflex-studio.com/music/aquanox2/feary_canyon.mp3' target='_blank'>this</a> track from AquaNox2.

<b>Mechwarrior 2</b> and <b>Mechwarrior 2: Mercenaries</b> Different sound to original Mech 2 (more electric guitar, faster paced). Mechwarrior 2's soundtrack is better suited to vast open battlegrounds, Mercenaries' is better suited to heated urban combat (which is appropriate for both games).
To digress momentarily: while on a really, really long car trip through wide open countryside (including sand dunes) I was listening to the Mech2 soundtrack, and it was *really* wierd. It was like beng in the game.
<b>Dungeon Keeper</b> Dunno, some of the tracks are nice atmospheric music.
From time to time, I also listen to the Rise of the Triad soundtrack (despite the fact that that game scared the s*** out of me), Dune II soundtrack, Sam and Max, Warcraft II, Sacrifice, Wing Commander II. There's nothing special about the Dune II or Wing Commander II soundtracks, I just liked listening to them because they reminded me of the games (and I loved the games. That was before I got them working again.)
Used to listen to the Half-Life soundtrack.
I'm not quite sure why, but I made CDs of the Doom and Doom II soundtracks... they're actually pretty terrible music to just listen to. Maybe for background music they're ok, but I was listening to Doom II in the car the other day... bleh. Sooo repetitive.
I do have to acknowledge that the Total Annihiliation music is "good music", and while I do kind of like the songs (they become endearing after you hear them so often) I don't often specificaly listen to it.
By der vay, the Morrowind music was by Jeremy Soule, who also did Dungeon Siege and a few other game scores. He's got quite a reputation.

Final Fantasy definatly has the best soundtacks for any game. MGS2 also has excellent musics, as well as Kessen.
I don't get what's so great about the FFVII sound track. To me it sounded very much like mediocre MIDI-neoclassical with nothing even remotely interesting in it.
