What exactly are you looking for as an answer here? Its like asking why water is made up of hydrogen and oxygen. Things are compiled with the sum of thier smaller parts, and those smaller parts give them the properties that we see. I guess to a certian degree, ironically enough, an apropriate answer to that question would be that hot sause contains acid because that's the way God made it.
