Had he used an emulator <i>at all</i>, you would've noticed graphical glitches and slowdown. There is no "use of emulator hacks/bugs" or "emulatent" (whatever that is).
I didn't even know you could do the backwards long jump thing before I saw the speedrun, but I used to do the forwards long jump/stairs thing all the time, although your speed isn't unlimited when you go forwards, obviously. Anyway, the rate at which he does it does not by any means require a third party controller... Unless you have arthritis or something.

Speedruns of 7 or 8 or 9 hours seem more typical of games like the GTA series.
If this is the new Mario 64 16 star run that was posted on SDA a week or so ago, i've not bothered to watch it. I watched the last one which was something like 1 minute slower, so that'll do.
But speedrunning is awesome. SDA appears to be down right now, but it's updated with new runs every few days.

I can do that right now on my N64 laying around without any of that garbage, probably can't speed run it like that, but I used to do that jump constantly.

This is a run done on the N64 itself, recorded on VHS, and taken from there. And considering it's a single segment run (Sure, only 20 minutes, but still), making a run that's absolutely flawless is nigh-on impossible.
The gyst i get from reading the forums is that you run it numerous times (After months of practice and research) and as small mistakes and such are bound to happen, you just kinda take the best one you can.
However, i'm just assuming this is the 16 star run that i've seen already and also the one posted on SDA, but the time sounds right, and the inclusion of the door skipping bug makes it sound moreso like the one i've seen.

But emulated runs, generally, and kinda fun to watch, but i prefer to watch people do proper runs on their native console, and also it removes any kind of exploiting of the emulator to do things the console just wasn't capable of.

I'll need to know a few things, though. When long-jumping and then stomp-jumping to stop at the desired spot, the guy also manages to quickly come out of the stomp jump and carry on running. How?
