What does cl_forcedefaultfov do? Is there a command to widen the field of view so the game doesn't look stretched out on a widescreen monitor?

The short answer: No.
The command either forces a 90 degree fov, or you can use the max (which I think is 100/110?). Playing NS in wide screen won't be effected by it (much, other then the 90/100 difference).

By the way, to change field of view manually by command "fov x", you need to enable cheats.
