I have 5 characters on Gorefiend, my main is a lvl 36 NE druid named Seglon. (Stupid blizzard changed my name without even giving me a list of potential ones, and I couldn't use electricsheep because names can only have 12 characters. I know people in real life that have names with more than 12 characters! <!--emo&--><img src='http://www.unknownworlds.com/forums/html/emoticons/mad-fix.gif' border='0' style='vertical-align:middle' alt='mad-fix.gif' /><!--endemo--> )
I am the GM of Ordo Celestica and also organized the rest of the Alliance Guildmasters into a consolidated GM's council to organize raids, defense, etc.
Send me a mail/pm when online and I can direct you to a guild that would best suit your needs.
Lightning's Blade also has a near 1:1 ratio (the closest server to date) and has never been a part of the 'unplanned downtime' crashes. Probably one of the most stable servers around.

Really there are no official estimates, blizzard won't release their censuses. And there are only like 2 other possibilities that I know of. Wowcensus.com, which is really unreliable since it requires the participants to sign up themselves. And the cosmos UI used to have a built in census that would record your race/side etc and upload it to a website. Except that not everybody uses cosmos, so that to is ineffective. I've just been going from what I've seen though. And having had numerous characters across several servers on either side, Alliance really does seem to have a lead. It could change from server to server, but my guess is not that much.
Edit: according to WoWcensus, this is the setup on my server Number of Players: 9,496 Realm Name: Gorefiend [R] Number of Alliance: 5,505 Number of Horde: 3,991 Most Popular Race: Night Elf Most Popular Class: Hunter
According to this we are pretty outnumbered, but by 1500? Im not so sure.
