I don't know how many times I've seen gorges building WOL in cramped hallways leading to the marine start. I don't mind if it's at the hive unless I can't get out as an onos. Gorges, when you are building please consider whether an onos can traverse the hallway easily. The more you slow down your onos, the less effective it can be.
Here's an even bigger matter. When onos are attacking marines don't run under its feet trying to keep it healed. Stay out of its way. Onos are big, they can't see you down there and besides, healspray is not going to help against lvl3 hmgs. Onos should be using regen anyway which is much faster than healspray. The only thing you're doing by running under an onos feet to heal is trapping it and allowing marines to finish it off. That goes for skulks, and lerks too. Please realize that onos are not as mobile and agile as you are and need as much room as possible to maneuver.

In a match, you will never have enough res to build a "wall".
And...
In a match, you know the OC's will only delay and give early warning (if anything), but in pub play, you can actually seal off access and get kills.

Lol, even in pub play, when I see a single stack WoL as a marine, I just jump over it and keep moving, I may only have 30 health left when I reach safe distance, but the aliens don't expect that somebody is setting up a phasegate on the other side of their WoL. They just aren't as good as they used to be, but thats good IMO.
As for blocking onos during escape, I've done it a few times, though, never caused his death because of it. Usually I'm the lerk that just created a corridor of umbra for you to exit through while flying backwards out of the cows way. I've also encountered the skulk/gorge as an onos leaving a hot zone as well. It usually appears they were just coming around the corner to attack at a bad time, (skulk) and just run smack into you. That doesn't really bother me much, but a gorge just standing there usually kind of annoys me, because, like you said fatty-spray isn't going to heal enough against ANY lvl3 weapon for that matter not just HMG. Couple of LMGs opening up on you is just as bad.
However, in pub play...
Onos runs in, does damage, gets shot, tries to retreat. There's a gorge, blocking the path. Onos dies. Yay gorge. (also applies to other evos, but gorges are usually the slowest critters around)
I can usually crouch jump over a gorge, meaning unless the corridor is really frickin tight, I'm ok.
You could build a WoL right behind him with binds for quick OC building <!--emo&:D--><img src='http://www.unknownworlds.com/forums/html/emoticons/biggrin.gif' border='0' style='vertical-align:middle' alt='biggrin.gif'><!--endemo-->
