Look at the files in your ns/gfx/env directory -- this is where sky information is loaded from. Each sky uses six images named <sky>up, <sky>ft, etc. Using that information, you can get the name of each sky by looking at the image file names, e.g.
ns/gfx/env/td2up.tga -> td2 is a sky available for ns.

Chalupamonk makes custom skys for NS, and has produced several for NS maps. There're also a couple for public use at <a href='http://www.evolutionarily.org' target='_blank'>Evo.org's Creation Page</a>. And AFAIK they haven't been used in any maps yet.
