I was exploring the new updates in creative, then I went to the LR giant skeleton where the infected spine eel is, and I saw this:

It seems like its textures only load when I'm close to it, when I move further away it turns to those weird black pixels. I haven't had time to test this out with other infected creatures, is it doing the same for you?
