On experimental, just updated to the Castles & Coffee release (build 43678)
Started a new game, first log entry is listed as "Day 55" not "Day 1".

I think, not positive that the day numbering is a continuation of my previous save game. Unfortunately deleted so I can't check for sure.

I suspect the error in day numbering has caused the Sunbeam to appear early, perhaps other side effects too.

Thanks!

Added to note: Have just tried starting two new games and each one's log started at Day 1 as it should.

Not sure why my other attempt got screwed up. Only thing I remember doing differently was that, from the main menu, I deleted several old save games I had laying around then started a new one, rather than simply going directly to the "new game" button.

If I track down any further differences/results I'll post them here.

I've had similar bugs in the past, where a game I know I've not played more than a couple hours on will show in the load menu as 18 hours, for example.

I had similar case, but a bit different.
In my case, whenever I try new game, it just continue my previous save data. Even thou I have deleted all previous saves. :/

I have tried uninstalling then re-install Subnautica, but its still continuing that one previous save data.
