I was loading up the game and decided to put on a YouTube video, the game then let loaded up while I was on YouTube, i then couldn't move my mouse it was stuck in the middle of the screen and I couldn't do anything

Try Going to the Subnautica root menu, Drive#:\Steam\steamapps\common\Subnautica and select subnautica.exe; run under admin, this restored the mouse function for me. Good luck!
