I was thinking the other day that the only thing to eat on the planet are various types of fish, and some sea plants. While I like fish, I think it would suck for that to be the only thing to eat. I also know that when your starving or your life depends on it, the taste probably isn't going to matter.

No - these vegetables or fruit would grow in farming trays inside your base ... in oxygen and fresh water the same as outside. There are farming trays in the experimental branch being tested for the next updates. Some of them are for use outside the base (kelp, etc) and some are for inside.

lol there is such a thing as too much of something, iron poisoning, copper poisoning. All minerals, metals and vitamins helpful to the body are harmful in large quantities.
Besides that point, in a survival situation it's likely you wouldn't just be eating the meat of any fish, you'd have to pretty much consume the skin, eyes, bones or any other part of the fish that doesn't contain otherwise inedible things. If anything your body would be craving things that have the vitamins and minerals that you are lacking in your diet if you are only eating the meat of the fish. Thus my point about you suddenly consuming the skin, eyes and bones and any of the helpful organs of the fish.

You don't really need a crew of over 100 people to do a mining operation with such advanced technology if anything the people there are specialists, ship bridge, maintenance, medical crew members. A lot of that space on such a large ship is relegated to equipment and storage of materials. No doubt those materials are refined on site. A lot of the machines being used at the time this game takes place would be semi or fully automated by AI routines.
Maybe the change of why the Aurora is no longer a terraforming vessel will have some light shed on it. They are still in the process of building the story so somethings are subject to change. Even the terraforming vessel thing, although I would think the developers would update the intro naration during the loading sequence of a new game.
Ok, sure we can assume that it's not a mission to kill all indigenous species and add our own, prefered ones, in their place but that sounds more like a colonization mission than terraforming.
Also, taking a slightly different tack (+ for nautical reference) ... this is supposed to be in the mid to far future after what you could assume was a lengthy voyage, right? The earth vegetables that you plant (if they can even survive and grow in the alien soil with alien microbiology surrounding it) probably won't resemble the plants we have on Earth today.

Farming - both plants and fish - is slated for the next update in February. But the recent H20 update was originally slated for October so don't hold your breath.
Nutrient block. You can find them in crates and also spawn them with the console. That's what I used to do. But it's boring to cheat so I put the game aside until farming arrives. Almost there....
