...so that if any changes are made that make it unstable on my system I can still use that? Also, it would be great to have a version with the dev console available because I like playing at 0.8 speed. Anyone know how to do that without simply not updating?
Get in the experimental update line? The final game will not have the console, so if you want something that requires the consoles, thats the only place to get it and then if you want it in the final version, you need to advocate for it and hope you get enough support to catch the devs' attention.

Or I could just not update it... right now I have the console and can slow down speed, which is great. It would be cool if you could do 2 installs in different directories and just update 1 of the two, so as to have the final version and an old one for fun and in case something screws up.
I'm on an old PC, but no I can run the game, not great frame rates, so fishing is difficult, also it feels like they sped it up since the earlier builds, slowing down seems to help PC performance and I like the atmosphere better too.
