Subnautica has lots of creatures. Fish, Sharks, Abominations. But, It doesn't really have shellfish.
Spiner - Small sea urchin like creature that can be found in the safe shallows. Attacks by using its spines. But only does this if provoked. Can be cooked and eaten.
Tounge oyster - Medium sized creature With 4 legs and is not aggressive unless provoked. Attacks by using its many tounges. Spawns in koosh.
Shalefish - Small clam. Not aggressive. It has 5 eyes. Can be cooked, eaten, and drops shell if you kill it. Spawns in safe shallows.
Tyrant - Reefback size creature. Looks like an alien like shrimp. Attacks with lighning fast claws. That create loud sounds. Spawns in jellyshroom.

thinking about it... even the crabsnake has some sort of flexible exoskeleton, right?
nonetheless you're ideas are great, they would make some good ambient creatures to immerse further into the world of subnautica
