  Feed it a Peeper first, then it should bring metal to you. Just don't stick around too long, they turn quickly.

  You can also drop several pieces of salvage at your feet. Stalkers will prioritize collecting over biting you. They won't attack you when you take the metal back either as long as they are distracted. You might get some teeth out of it to boot.

  The stalkers near my base love to steal the camera drones from the scanner room...every time I connect to them they're sitting on some stalker's wealth horde in the kelp forest. Still, it keeps their attention away from me.

  The Seamoth seems to be a favorite thing to bite also.
  I've used it several times to collect Stalker Teeth.
  
  Just leave it several meters above the spotted tooth, then while you're diving down to retrieve it, they will busily be attempting to chomp on your mini-sub.
