It really, really isn't. it's just that with most games you don't even know they're in development until they're almost complete.
Take this from the Deus Ex: Mankind Divided Wiki page:
"In October 2013, video game developer Eidos Montreal announced that the Deus Ex series would be expanding into a mobile game and print media franchise. Additionally, the team behind their 2011 Deus Ex: Human Revolution was already at work on a new release for Microsoft Windows, PlayStation 4 and Xbox One. In March 2014, publisher Square Enix applied for a trademark on Mankind Divided's title.
The game's announcement was leaked a day in advance of its official unveiling in early April 2015."
So it had been in development for at least a year before they even had a name for it, then it was another year before they announced it to the world and that was nearly a year before it's original release date, which was then put back six months when they realised they'd need more time to hit the standards they want for the game. That's a minimum of 3 years, and that's from Eidos-Montreal, a huge studio with far more resources than Unknown Worlds.
The difference here is that Subnautica is being developed out in the open, where we can all help contribute. Yes it can make it a little frustrating, having the carrot of a great game dangling in front of you for so long, but were they developing this the conventional way, it's likely we'd have only just heard of it, it'd take longer to develop overall, and when it finally arrived it would have been a lot less refined than it will be this way.
