A concept for a critter based on Fiddler crabs.
The Bulwark Crab is a large crustacean that would live in the Red Plains/Grassy Plateaus, and use its one massive arm as both a shield and a hammer to ward off predators. They'd be a bit larger than a Gasopod, with thick, sturdy legs underneath them. Typically peaceful towards the player, they won't attack you, but will defend themselves if you whack them with the knife, or shoot em with things.
They will look at you if you swim nearby, but will then continue about their business, walking around the biome, picking up bits of coral with their little claws to eat.
Swimming near them offers you a good deal of protection, since they'll smash away Bone Sharks, Biterfish, and Sand Sharks that come near trying to eat you.
Their main downside is that their attacks are slow, and they can easily get overwhelmed and killed if swarmed by predators.
When they die, a Bulwark Chitin can be harvested from their shield arms, which can be used to reinforce the Exosuit.

Scale up a either a Pistol Shrimp or a Mantis Shrimp, and you'll be swimming in a whole new world of trouble.

Good point, but I bet they will eventually add it since it is one of very few concepted creatures that we know about that aren't officially "planned"; the question is when. That makes me wonder how many creature concepts they have never released to the public!
I would say that for all we know the Rock Puncher (whose animations have begun, so its safe to say it's planned, and which is based off the mantis shrimp) may do something similar. Even if it doesn't, given the great variety of life they could draw from, I doubt they would add two creatures based off the mantis shrimp.
