These are the things you can't catch in your hand. But usually they catch you.
The big farty thing that squirts yellow cloud if you get near <Gasopod>
The nasty wormy thing near the red grass banks that hurls balls of gubbins at you <Spike Plant>
The big manta like thing with tentacles <Reefback> (nearly a bad typo there)
The dolphin/gator things are <Stalkers>
The huge leviathan thing <Reaper>
The blue glowy floaty things near the purple mushrooms <Jelly Rays>
The purple/blue glowy jellyfish things that hang from caves <Stingers>
The pink holey bubbly things <Brain Coral> that pump out air bubbles
The evil screaming warbly exploding things are <Crash>
Oh and there's several versions of blood suckers? <Bleeders>
The bleeder looking things near the big tubes <Jumpers>
The Armoured Sharks that live in the sand <Sand Sharks>
The tiny glowy radioactive shrimp <Rock Grubs>
The fish you can catch are obvious. The one medium fish you can't is the <Rabbit Ray>
The floaty sticky lumpy bumpy roundy pinky things. Are the <Floaters>
Have to forgive me, capt clueless when it comes to naming things and I don't get out of my moth, except to pee or charge the battery.

Gasopods I believe is what they are called.
The huge leviathan thing?
The only two really big creatures currently in the game are the Reaper(the big red thing) and the Reefback, which looks like a huge octopus thing.

Blood suckers are bleeders.
The glowy radiocative shrimp are rock grubs.
Purple/blue glowy jellyfish are stingers.
Do you have images of the nasty worm in the red grass that shoots out glubbins?
The blue floaty things are Jellyrays (If they have tentacles, otherwise idk.)
The Purple/blue jellyfish things may be Floaters if they're on rocks, or they're Hanging Stingers if they hang from ceilings of caves.
The pink holey bubbly things are called brain coral.
The only blood sucker in the game so far is called a Bleeder, it's small and has a bulbous end. You may be referring to the Jumpers that look similar from a distance and are gray and orange.
The tiny radioactive looking shrimp are called Rock Grubs.
