Wait, are you being forced to ONLY eat one cheese the rest of your life or just you ever wanted cheese, you'd have to pick that cheese?
If I was forced to ONLY eat cheese, it would be provolone (only real cheese aside from cheddar that I can eat plain, and it doesn't have a bold taste).
If I just had to pick this cheese whenever I ate, it would be monterrey jack cheese (surprised nobody's mentioned this).
