Tony Iommi - "Heaven and Hell" Bit biased as I'm a huge Sabbath fan, but the feedback bits at the start are just genius, could've gone for "Snowblind", "Planet Caravan", "Sweet Leaf", or dozens of others though.
Rocky George ( Suicidal Tendencies )- "Emotion No. 13", "How will I laugh Tomorrow", "Possessed to Skate" Technically brilliant player, but doesn't ever let it get in the way of the tune, unlike tosspots like Malmsteen and Co.
Jerry Cantrell ( Alice in Chains ) -"We Die Young". Blues feedback madness, and the song that restored my faith in "Rawk" after the horrors of the late 80's.. "Them Bones" is brilliant as well. One of the few metal players who understands more is not always better.
Sir Jimi of Hendrix - "Easy Rider", "Purple Haze", "Voodoo Chile" The man who started it all. Nothing more to add.
Duane Allman ( Derek and the Dominoes ) - "Layla". Eric Clapton usually seems to get the credit for this ( fair enough, the legendary intro was him after all ), but the slide guitar solo is actually Allman, probably the greatest slide guitar ever imo.
Kirk Hammett ( Metallica) "The Outlaw Torn". Probably the best rock guitar solo since Jimi copped it. He really has got progressively better, as Metallica have become more and more suck.
I don't really have time to complete this rant, but honourable mentions must go to Ritchie Blackmore, Jimi Page , Gary Moore, Tom Morrello and Ritchie Sambora ( Stop laughing, I'm serious. Look past the suck-rock, and you'll see an excellent guitarist...)

Right on with Jerry Cantrell, but not only that, he could actually play to. People such as Kurt Cobain.... well he took less is more just a little bit too far, Jerry could still pull of the technical stuff when called for. I am very much bias when it comes to Alice in Chains and Jerry Cantrell's solo music, as they are my favorite band ever.
You'll also notice I placed Planet Caravan (though the cover done by pantera) in one of my listings. Come to think of it, I do like the orginal version better, but I was listening to the Pantera cover at the moment, heh.
