I'm looking for system utilities to keep a system in tip-top shape. Anyone have any recommended programs? And does anyone know if "ram defraggers" actually do anything?

Norton Systemworks looks through your settings and puts them the way it thinks they should be. sometimes this is helpful, and sometimes this is harmful, it is 100% better to learn what it does and how so you can decide if you really need each "optimization" and do them manually.
