cvarlist mp_
Will list every server cvar starting with mp_. Or just cvarlist to list every cvar registered on the server. Same thing applies to cmdlist, maps, etc.
The cvar is mp_logmessages. But it seems to have been disabled/removed in NS for some strange reason.<!--emo&???--><img src='http://www.unknownworlds.com/forums/html/emoticons/confused.gif' border='0' style='vertical-align:middle' alt='confused.gif'><!--endemo-->
as a note of precaution, it's useful to search the logs for racist or abusive language (if this is banned on your server).
Also the logs are helpful for going back to a moment you remember something happening, eg someone spams the server with racist remarks and leaves before you ban him, then you just go through the logs later and ban him in retrospect...

Incidentally - for going through multiple logs at once - notetab light is a very powerful program. It works like notepad, but can open as many logs as you want at one time, search through all of them at the same time, and lots of other neat features. I've been using it for 2 years doing web site management and server management and I haven't found something comparable.
