How to.....Fix the knife farming bug

Fellow Subnauticans,
I am currently experiencing an issue with my knife where I cannot farm for items in bulk such as: Table Coral or the Mushroom Tree's Fugal Sample. At first, I can get a few of these types of items but then it's like the thing in question that is being harvested becomes invulnerable to my efforts to continue gathering. I try leaving the biome, swimming to a different outcrop of the stuff but no go. Any leads on how the devs are tracking this? If the issue is even being looked at? If anyone has any leads please share. Thank you.
