Drillable rocks and/or placeholders is what I thought too. There's "giant lithium crystals" in the Koosh Zone as well that can't be interacted with in any meaningful way.

On my last stroll in the Sparse Reef i found those little bad boys as well

Took those pictures with a smaller/regular size ressource to give peeps a size comparision
On the moment i was like wtf is this a bug?! ... but yeah Exosuit drillable thingies seems like a good explanation

Great. Next thing I know we find out our Seamoth and Cyclops have both been replaced by Cybertronians who have scanned their forms before disposing of our vehicles so we can use them ourselves...
